Yes you can.
I currently have a 3TB for storage. When you get it, don't format it like you normally would- it won't work with the X58s Bios that way. Within Windows, go to:
Control Panels/Administrative Tools/Computer Management/Disk Management
In the Disk Management console, right-click the MBR drive (your 3TB drive) you want to convert to GPT and then click Convert to GPT Disk. If the drive is not empty or contains partitions, this option is unavailable.
After you have converted it to a GPT disk, you can format it in the Disk Management console like you normally would. Then you can mess with creating partitions if that suits your fancy.
Fair Warning: YOU CANNOT BOOT FROM THE 3TB DRIVE!! The X58 Bios does not allow it. And will never allow it. DO NOT DO IT!! You can, but you will lose a bit of your HDD due to the 2.2TB limit of the bios... which kinda defeats the purpose of having a 3TB drive, if you can never use it all by booting off of it.
